if you decide to go western, I recommend CORRIENTE SADDLE CO. New saddle for about 600 bucks. My son has one and I am very impressed with the quality for the money. imo you can easily spend twice as much for half the saddle. Mod assoc. Is the basic western saddle style.

I don't really know of any great diy advanced training books, but I do have a couple of favorites for you that focus on basics and philosophy. IMO, what most pros call basics are very much lacking in 99% of the horses out there and rider's skills, so don't be thrown off by me calling these books bas...

I've always used "hunt em up" to tell the dogs when it's time to do business. I do prefer to keep them at heel until time to release them. Add to this the gun and gear, and they figure it out pretty quickly.

Tri Tronics Bark collar works well, you just have to keep an eye on their neck.
