I have the same harness and a similar dog. It'll fit.
I'd stop and water that dog as early as 5 minutes into the workout (no later than 10) whether he looked like he needed it or not.

There is no difference in training a hunting dog and a pet. You just train the hunting dog to do more varied things. The first sentence is exactly right. IMHO, 12-15 mph is a little fast. I am getting good results with my dogs by attaching them to my mt bike and riding the brakes just enough so that they do not break into a run. I am currently at the AKC Gun Dog Championship. I arrived last Monday in the afternoon. I do not ride a horse so all that I have seen personally has been at the breakaways or small portions of the course as the brace makes a road transition from one side to the other and I have not seen all braces....
