Urinary Tracy infection would be my guess. The urine can have a mucus substance in it with a uti. Watch her and see if she seems uncomfortable when peeing. I'd recommend keeping an eye on it for a day or two and get her plenty of water. If it doesn't clear up, bring her in.

I'm not 100% sure why you think lentils are bad. Protein from legumes is usually very high quality, and lentils have a very low glycemic index.
