The biggest thing you can do is to get with people that know what they are doing. I'm not a pointer/versatile guy, so I can't help you with a GSP at all. Except, to say, find a NAVHDA group and go there. They will teach you how to teach your dog.

When contacting the pro, be ready to barter. Likely, his business model doesn't revolve around middle-aged guys (me) begging for help. Be willing to offer something he needs- throw birds for a few hours, shovel poo, shuttle dogs, or whatever else he'll let you do.

American Water Spaniel. They will chase anything and can be trained as a spaniel or retriever. They're great for waterfowl and upland. They'll also turn heads and give your an excuse to talk about your dog to other hunters.
