Might check YouTube for Cesar Millans videos on sensitive dogs. I have seen some shows of his on TV we're he worked with dogs like that and helped them.

You might check into clicker training as I have trained dogs for years and used some clicker training on my last two pups and it seems to speed things up. I kind of like it.
Check out all the Willow creek YouTube videos as he has several on clicker training.

We have had good luck with Purina Proplan Sensitive Skin and Stomach Salmon forumula.
Make sure your not feeding too much. We feed our 50 pound female around 1.5 cups twice a day.
You might worm your dog, loose stools are caused by worms. Panacur for 5 days straight should do the trick.

I have had several breeds of Pointing Gun Dogs.
GSP's have an amazing off switch but like most breeds make sure you research the bloodline.
My dogs are bird hunting machines in the field but get indoors and are calm lap dogs.

I put a wire wall in our crate to make the crate just big enough to lie down in and it worked for peeing.
Pups will have accidents but long periods of time is hard on a pup to not pee , the seem to get better
after getting around 6 to 7 months old. Dogs mature at different rates.
