Those Arizona quail are supposed to be a lot harder than our valley quail up here. The dog hit's a big covey up here and they don't hold much, they are to spread out. When the flush they separate and then you get the singles and they hold well. Don the singles do tend to hold better here too depend...

Benelli - another consideration could be a treadmill. It would be a way to get your dog some exercise in any weather. Once trained, you just fasten his leash on there and he's good for a while. Some dogs really enjoy it.

Jim, I can't explain why, but often times getting a dog staunch on stop to flush translates to staunch on point too. My guess is that the dog knows a pointed bird could fly, and knows he is to stay put if it does. One advantage to STF is that any pressure you are using is on flying birds, not scente...

A well know old horse trainer is famous for saying "Make the right thing easy" For the most part, our animals work for praise, set up the conditions where they pretty much can;t do it wrong, so they automatically do the right thing and get praised for it. If it happened that way, I'd have no problem with a mixed breed. It's what the dog can do in and out of the field that matters.

I would guess a person would only want to train this on a mature dog that is very trainable, and already staunch in every way. To me, it would take a pretty special dog at an advanced state of training to perform point and flush as well. Not all dogs ever get there, right?

Stained and sealed concrete is hard to beat - as long as you don't have a lot of cracks in the pad., because it will show the cracks. Check out industrial places like grocery stores, Home Depot, etc. You'll see polished, sealed concrete (sometimes stained, sometimes not). It can be easily wet-mopped...

I wouldn't, in general, limit water. If the pup is a female, might need to have her checked out for UTI. At 10 weeks, it is very predictable when the pup will need to eliminate.
