I would say it was a mink.
A mink will eat the heads and leave the rest everytime.
A coon usually eats more of the bird but if it only eats the heads, it makes a mess out of the rest of the bird.
A coon wouldn't get out the coop without bending the bobs on the trap door.

We use Johnny Houses made from blue plastic barrels. Using 1/3 of the end you build them with a funnel, feeders and water tubes like other houses. The feeder and water tubes are made with large PVC, cover the feed tube with a cap keeps food dry and leave the water open and it collects its own water...

I did keep them in the coop for a couple of months, then only let them out in the evening right before dark so they would only fly for a bit then come back in to roost. Probably did that for a month then started taking them out further and further to get them used to homing. I did lose a few, just ...
