Join or go to a game farm and use pen raised birds. That way your dogs are getting the bird exposure they need. You can't make a bird dog without birds. How right you are, but what everybody forgets is, you can sure mess a dog up if the birds are done properly. As everybody knows, it's 100x harder ...

Another great book is "POINT- Training the All Seasons Gundog" by James Spencer. It's a good step by step book. The Delmar Smith Method is a good read as well.

I have in the past led my pup by the area I am stroing the birds. They will perk up and agressivly start work the air with their nose. After I did that I stake the pup out on the edge of the field. Those are some great pics. Way to catch the intensity in your dogs points. I too like how that pic turned out after he added the color and black and white.
