Introducing hunting 2nd dog to nonhunting 1st dog

Hello all, been reading for awhile and now have a question for collective wisdom. Here's the situation:
- I'm relatively new to bird hunting
- live in central Cali
- have two young boys
- already have a small female german shepherd mix. She's an assertive gal with other dogs. Unfortunately she has no hunting sense, a 4 yo rescue.

I'm looking for an upland birddog, especially public land quail and chukar.
1) we need a dog that is going to most easily fit into our current situation. Consider my lack of experience, young boys, other dog that will seek to dominate, and wife's desire to integrate as little else mess in our house as possible.

Obvious to me is a male dog. I'm open to any breed and age, but am most closely looking at lab, gsp, brittany. Easy to train and easy going are the two most important (if mutually exclusive) traits.
