OK guys, here's a really good one we had last night with the chukar the gunners shot at our hunt test last weekend...
Usually I flour the breasts, dip them in egg and then coat them in a mixture of bread crumbs, pepper, garlic & parm cheese. However, didn't have any eggs so I used the recipe for oven baked chicken on the side of the Bisquick box and added tne parmesan cheese. They were so tender and juicy!
1 Tbsp Butter
2/3 Cup Bisquick
2 tsp. Paprika (I used more)
1 1/2 tsp. salt
1/4 tsp. pepper (again, used more)
12 boned out chukar breast halves
Then I also added:
2 tsp garlic powder
1 cup freshly grated parmesan cheese divided.
Heat oven to 425 F. Melt butter in 13x9 glass baking dish in oven.
Stir together dry ingredients reserving 1/2 cup cheese. Coat chukar well. Place in dish. Butter should be melted and pan hot.
Bake about 10-15 minutes, turn each piece, sprinkle remaining cheese on top and cook another 10 minutes. Delish.
