Paul it depends how much you put in and how thick it is cut.
Just do it till you get the consistancy you want, not real dry but still plyable so it will be chewy.

It's not how many breaths you have taken but how many times it has been taken away!

Has anyone noticed common sense isn't very common anymore.

Beef, Pork or Venison? It would'nt happen to be a Nesco dehydrator would it? Are you using a marinade or just a dry rub?
Generally speaking it can take 6-8 hrs in a dehydrator, or you can use a wire baking rack and set the oven at 150-160 for about 3-4 hours. At leastv that has been my experience with the Nesco....

Good luck

Just got my dehydrator about a year ago, here is what i found:

Deer:
160 degree's
1/4 inch thick pieces
4 hrs in dehydrator.

Beef:
160 degrees
5-6 hours
1/4 inch thick pieces

it seemed to me that with the beef there is a little more fat and it takes longer. Once you remove the jerky refrigerate over night in a ziplock bag. This will allow any moisture left in the meat to even out and you will have some great tasting jerky.

I also have tried using 4 trays compared to 8 trays, the more trays you have on the dehydrator the more time i would add. about 1/2 hour to 3/4 hr for every 2 trays i added.
