I need some recipes for woodcock.

fillet the breast meat off the bone.
Pound down to an even thickness, 1/4" or so.
Use a little of your favorite steak or pork rub or Old Bay and garlic powder, seasoning on both sides.
Slice a small halepeneo pepper and lay on the breast meat.
Roll the breast and roll the breast in peppered bacon. Pin it closed.
Fry in the bacon till done. Eat with a smile.

Also don;t forget the little legs.
Pull the feathers off cut like you would a quarter chicken leg so up above the thigh.
season as you like sautee in garlic butter just for a minute or so. Leave the little feet on.

Or use your favorite hot sauce and marrinate for a couple hours then sautee.

bake in oven with garlic, fresh basil and olive oil. great with roasted potatoes too!
