Chukar or Quail en Casserole


Chukar or Quail breasts flour
butter poultry seasoning
salt and pepper white wine or cooking sherry
pinch of cinnamon mushrooms, sliced

rinse quail breasts in water or dip in milk if you prefer
dredge each piece in flour to coat
melt butter in frying pan and quickly brown the breasts in the butter
lay the birds in the bottom of a casserole dish
brown the mushrooms in the butter and layer over the quail breasts in the casserole dish
back to the frying pan: scrape up the brown bits of flour, (you may need to add more butter and flour)til you get a thick sticky mix.
ad the wine and make a slightly thickened sauce, add cinnamon, salt and pepper, and poultry seasoning to this.
pour over the quail and mushrooms.
cover and cook at 350 degrees about 45 minutes
serve very hot over wild rice or ordinary rice
