Quail are definately my favorite. Pheasant tend to be a little too dry. I don't like the dark, gamey tasting meat on prairie grouse. Never had ruffed grouse or WILD chukar though.

Chief, marinate the pheasant in zesty italian dressing overnite then fix on the grill & do not overcook, bet it will change your mind. You can marinate all game birds the same way & it will add moisture & tenderness.Chukar cooked in this manner will melt in your mouth.I also do wild turkey the same way, almost have to if you are to lazy like me & skin it. :)

My old grousing buds may never forgive me, but woodcock (meium rare) top my list, and of the white meat birds, I prefer quail.
If you think I'm wrong, you might be right.

I've eaten them all and quail is the best - hands down!

Blue Grouse is #1 of the 8 species I have had. Ruffed Grouse isnt on my list yet.

Quail, wrapped in bacon, over an open fire, on a Texas Quail hunting trip. Camping out, sipping some fine Vodka...can't get much better.

Quail and Chuckar tie, then pheasant, didnt care for P.Chicken.Timberdoodle is good. VZ alot of people dont know about the wonders of the Italian dressing soak for overnight a amazing boost for the juice. Then dip in a beaten eggs and 1/2 flour,1/2 Italian bread crumbs with Tonys creole seasoning and fried for about 5 to 6 mins in 350 oil and you will "Slap your momma and, kick the neighbors dog".Great for all the birds and turkeys too.

Any wild bird, taken by you , and prepared properly is awesome. I've had some #1 grade beef that was horrible due to prep.and cooking. Quail is at the top of my list for overall flavor and options with cooking.

The only upland bird I've eaten is quail (unless you count dove as upland). Quail is actually my favorite bird to eat but I hope to give some other gamebirds a chance in the next few upcoming years. Hopefully I'll get an opportunity to hunt pheasant this year and blue grouse next year in New Mexico. If I can ever get up to Michigan my wife's uncle has some property up there with grouse so I'd like to try to get some of those one of these days.

The last quail I had I marinated in tequila and lime with cilantro and garlic. Grilled them over a mesquite fire. MMMMMM.

Woodcock is my favorite game bird to eat simply because it is my favorite bird to hunt. I love watching the youngsters point their first wild bird and for most of my young dogs it's when the woodcock flights come through. I savour every bite while visioning my pups bumping, chasing and finally pointing the little doodle that is now on my plate before me. Watching my boys blow holes in the sky as they swing on the elusive bat-like creatures while I conveniently "handle the dogs" brings tears to our eyes with laughter as we share the days hunt. Woodcock over a bed of wild rice with fresh mushrooms and a full bodied red wine.... Now that's a game bird! :D :D :D
