Meat Pigeons
I have eaten pigeon on several occasions in Italy, Spain and France and loved it.
My question is it the same variety or a different bird?

I suppose any pigeon could be eaten, but there are specific varieties that are raised specifically for meat. I am not an expert but they are generally larger and I believe that some of the varieties are incapable of flight.

I've eaten barn pigeons and they were fine. About all you'll get is a breast. My homer's are a lot bigger but never tried one, they are supposed to be young I believe.

Try the King Pigeon, they fly as well as a chicken yet smaller, but larger than a regular pigeon.

The White King has been developed into a show breed and are not the meaty bird they used to be. The French Mondain are still big meaty birds. And there are other breeds also. Kings and Runts are generally used for meat birds. Not homers.
