A Utah Tundra Swan Hunt w/pics

Post by crittercontrol » Sun Nov 12, 2006 8:57 pm

Utah happens to be one of only a handful of states that have a hunt for this facinating species of waterfowl. You'd think with over 40,000 wintering on the Great Salt Lake each year tagging one would be easy.

My father pulled a tag the last three years but always came up empty handed dispite our best efforts.

This year, however, he finally cut a couple of notches in his tag.

We have tried preparing swan a number of ways including:roasted turkey style w/apple stuffing, Orange sauced, Gumbo, Jerky, Etc.
I prefer mine smoked! Very tastey!
Somewhat difficult to keep lit however!
