Anybody ever use any "different" birds in their launchers for training.

What is it your thinking? I suspect that if you put any bird that would fit in and would fly away, you could train a dog with it.

Right. If pigeons work, why not Starlings. Not sure if there are laws tho.

In forty plus years of hunting I have never run into a pigeon in a plum thicket. I have, however, had whole flocks of starlings on the ground in front of me. I don't know if it would be a problem, I'm just saying...

I have heard for years that pigeons carry a similar scent to game birds. Not sure if trash birds have the same scent and if you want to train your dog to point them.

Once they are going on game birds being shot, they will quit "bleep" birds. just don't shoot "bleep" birds for them.

I have heard of some people calling them "Rock doves" I am sure I will regret this but they are bigger than doves and don't taste bad.

A dog does not know what a game bird is. They start pointing any bird and only quit when you start shooting a certain bird and they will finely figure out that the little birds are not worth their time. A pigeon is as much a game bird as a woodcock, grouse, or pheasant. They are always willing to hunt whatever you want to shoot over them.

The rock dove or feral pigeon was brought over by immigrants as a food source 400 years ago. My father-in-law used to raise them and quail as a food source.
