Pointing or retreiving dummy?

I am very new to training and would like some help with dummies. I have an ESS/GSP cross. Yes a flusher crossed with a pointer. He does point but works in the pattern of a spaniel. He is about 9 mo at the moment. I have been practicing some blind retrieves with him and he does great. I have noticed that for the bumper he goes straight in for the retreive but when walking or checking out the countryside he will usually point the birds and squirrels instead of charging in. Should I teach him to point the bumper and command woah or something then use the release command for the flush? i just want to make sure I don't instill a bad habit before his first season. I know this is a newbie question but any help, tactics, or ideas would be great. Thanks!
