I am debating between Danner Elk Trackers, Danner Wingshooters, or Irish Setter Wingshooters. Anyone have any advice? I don't need insulation, but waterproof is a must. I hunt a lot of side hills and need ankle support. I also kick a lot of brush when hunting quail, so durrability is important.
Anyone got experience with these?

If you need a lot of durability, and for them to stay water proof, I wouldn't go with Danner's nor Irish Setters.
I had a pair of the Wing Shooters and I blew them out in 1 season. But most of my hunting is done in really steep, rocky chukar terrain.
A friend of mine had about the same results, and another friend wasn't very happy with his Danner's after about a season.
But keep in mind that the terrain we hunt is pretty rough.
For my needs, I like the Meindl's. They were the toughest boots I've ever had to break in and thought I was going to return them until they were fully broken in (20 miles or so). Next time I get a new pair I'm going to have a set of custom foot beds made for them.
